Zucchini Bread
INGREDIENTS
* 3 eggs
* 1 cup vegetable oil (or you can use half oil and half applesauce)
* 2 cups white sugar
* 2 cups grated zucchini
* 2 teaspoons vanilla extract
* 3 cups all-purpose flour
* 3 teaspoons ground cinnamon
* 1 teaspoon baking soda
* 1/4 teaspoon baking powder
* 1 teaspoon salt
* 1/2 cup chopped walnuts (optional)
TOPPING
The crunchy crust recipe is this: -1 cup brown sugar -1 cup all-purpose flour -2 tablespoons butter or margarine -2 teaspoons cinnamon -1/2 cup chopped walnuts. Mix it all together really well and crumble on top of the batter prior to baking. The topping cooks crisp and adds just what the bread needed. ( I added a lot less flour...like a couple of Tablespoons)
DIRECTIONS
1. Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans.
2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar.
Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans.
3. Bake for 60 to 70 minutes, or until done. You can even drizzle some icing/glaze over the top of some loaves for an added treat!

Looks delicious. Last evening, Tim brought over part of a large loaf he made. He said, there's no nuts, he can't eat nuts until he gets his teeth the second of Sept. LOL We tried a piece and it was DELICIOUS. I have to call him later this morning and tell him.
We're waiting for Charles and Edna to stop over, they got in Sunday evening from Texas. Charles likes to come back during Fair week.

These look great!! I made some for Xmas one year, and attached them to the xmas cards, and then I dropped them off personally (well, obviously only to people who live locally). That was back when driving around was cheap ;)
